This 3 ingredient high protein pancake bowl comes together in less than 5 minutes and is packed with 18 grams of protein. It’s the ultimate quick and easy breakfast recipe!

Ingredients Needed
- protein pancake mix โ I used Birch Benders plant protein pancake and waffle mix, but feel free to use your favorite protein pancake mix.
- egg whites โ instead of water we’re using liquid egg whites, which adds more protein and helps the pancake bowl fluff up.
- mashed banana โ adds natural sweetness and additional moisture, helping to create a perfectly tender texture.
Recipe Variations
- Chocolate: Add ยฝ-1 tablespoon of cocoa powder into the batter for a chocolatey twist. You might need a touch more egg whites or some water to get the right consistency. Top with chocolate chips before microwaving.
- Apple: Swap the mashed banana with ยผ cup applesauce and add a dash of cinnamon for an apple pie flavor. And be sure to top this pancake bowl with chopped apples and maple syrup. You could also make the baked apple topping from my apple cinnamon oatmeal recipe. Yum!
- Pumpkin: Swap the mashed banana with ยผ cup pumpkin puree and add a dash of cinnamon or pumpkin pie spice for a fall-inspired pumpkin version.
How to Make a Protein Pancake Bowl
Step 1: Stir the mashed banana, pancake mix and egg whites together in a microwave-safe bowl.
Step 2: Microwave on high for 90 seconds, or until the pancake is set and a toothpick comes out clean. Add your favorite toppings and enjoy!
Substitutions & Notes
- Egg-Free/Vegan: Make sure you’re using a vegan protein powder and you could try swapping the egg whites with ยผ cup water. Just a note, that this will reduce the amount of protein in the pancake bowl.
- Gluten-free: Make sure you’re using a gluten-free protein pancake mix.
- Banana: If you’re not a fan of bananas or just looking for a change, try ยผ cup unsweetened applesauce instead of the banana.
Protein Pancake Bowl Topping Ideas
Toppings are the best part about eating pancakes, am I right?! Here are some ideas:
- Maple syrup โ I love adding a drizzle of maple syrup to my pancake bowl. Highly recommend!
- Fruit โ You can’t go wrong with fresh fruit. Banana slices, blueberries, blackberries, strawberries, raspberries and peaches would all be delicious. For another fruity topping idea try this strawberry chia jam.
- Nut butter โ I love adding a drizzle of almond butter or peanut butter to my pancakes along with maple syrup! For a nut-free option use sunflower seed butter.
- Greek Yogurt โ For some more protein top your pancake with a scoop of Greek yogurt. I personally love doing this.
- Nuts and seeds โ For some crunch, top your pancake bowl with chopped nuts like pecans, walnuts or almonds. Seeds like sunflower seeds, pepitas, chia seeds or hemp seeds would also make for a great addition.
- Granola โ For a sweet crunch top your pancake bowl with this homemade granola.
- Chocolate chips โ Before cooking, top your pancake batter with chocolate chips for some chocolatey goodness. Iโve been loving Lilyโs chocolate chips as they are dairy-free and low sugar!
Can I Make This Recipe Without a Microwave?
Unfortunately not, this recipe was designed to be made in the microwave. If you don’t own a microwave and want to make protein-packed pancakes, I suggest making my protein pancakes instead.

Protein Pancake Bowl
Ingredients
- ยผ cup plant-based protein pancake & waffle mix, I used Birch Benders
- ยผ cup egg whites
- โ mashed banana
- Toppings of choice: I did peanut butter, blueberries and maple syrup
Instructions
- Spray a microwave-safe bowl with non-stick spray. Add mashed banana, pancake mix and egg whites to the bowl and whisk to combine.
- Pop the bowl in the microwave for 1 minute and 30 seconds or until a toothpick in the middle comes out clean. Add toppings and enjoy!

Brittany, this recipe is absolutely delicious, quick and easy. It was the perfect quick breakfast for a busy mom on the go and felt like such a treat. I didnt have a ripe banana, so I replaced with a heaping scoop of vanilla Greek yogurt and added a drop of stevia and vanilla extract. The texture was fluffy like a thick pancake. Ill def try with banana next time though. This kept me full for hours and I will definitely make again for breakfast (or maybe even lunch!) ๐

I have switched out the banana for both applesauce and pumpkin puree. Both worked, but the pumpkin puree had the best taste (in my opinion). I also added some pumpkin spice and a some maple syrup just before serving. So yummy!!

I saw this pop up on IG. I have several different kinds of protein pancake mix. This time I used Birch Benders Keto (Iโm not Keto, I just happened to have some of this to use up). I added 5g of Lilyโs Baking chips. The banana I had was pretty small – 1/3 measured out to 45g.
I agree with one of the other reviews that it had a bit of an eggy taste, but after my first few bites, that didnโt bother me. I gave it 3 stars because it wasnโt very fluffy. I contemplated adding some baking powder before I cooked it, but wanted to follow the recipe as close as I could the first time. It did take longer than 1 1/2 minutes. I kept adding 30 second increments until the middle was done, but this seemed to result in a bit of over-cooking around the edge.
Iโll definitely try this again, but use one of my other pancake mixes. May also need to increase the amount of banana since mine was pretty small. I put everything into my tracker, so prefer gram measurements over 1/3, 1/4, etc. especially when a food like a banana can vary so much in size.
