This was a big hit at a recent gathering of friends. The pomegranate makes it taste so fresh and the goat cheese is had an ice creaminess to. It will not weigh it down. Very simple to make. Will be making this again for sure. Highly recommend!

How much is a “bunch” of kale? Different stores sell it differently.

This is the best! We make it all year long. If we don’t have pomegranate we use dried cranberries! Definitely a family favorite!

This salad is my new absolute favorite. The combination of flavors is perfection. I made this for Christmas dinner and it was loved by everyone! It will definitely be made many years to come (not to mention many times in between). Highly recommend!

Love this salad. Everything about it is wonderful–taste, texture, appearance.I used a creamy feta (not too dry and crumbly).

Delicious, easy salad!! And it’s beautiful and healthy too! I made this for Christmas Day dinner and it was a big hit with my family! Only modification I made was replacing the candied walnuts with toasted raw walnuts.
