I love gingerbread, but not the calories! I’ve lost 65 pounds over the last 2 years, I’m so happy to have found this recipe so I can have a slice with a little Trader Joe’s pumpkin spice cream cheese for fewer than 150 calories. I used even less maple syrup and molasses – just 1/4 cup of each, and it was plenty sweet. Thanks so much!

Yup! We tested this recipe with blackstrap but feel free to use dark molasses if that’s what you have on hand.

Hi Sara – I have not tried making muffins with this recipe, but you should be able to use the same batter recipe and just adjust the time of baking (you’ll need less time). If you give this a try, let me know how much time it takes to bake and how they work out for you!

Hi Sue! I just googled and it looks like if you’re using dark mini loaf pans of medium size, you’ll want to reduce the time by 25% and then check five minutes early. Many mini loaf recipes take about 22 to 25 minutes. Let me know if you try it in your mini loaf pans!
