Creamy coconut milk, chia seeds and sweet strawberries are mixed together and topped with a drizzle of chocolate to make this decadent chocolate covered strawberry chia mousse. No one will ever guess it’s vegan and paleo-friendly!
I know we still have a little time, but Iโm ready to start celebrating Valentineโs Day. Anyone else?
If Iโm being honest, Iโve had my heart wreath up for over a month. Iโm such a sucker for Valentineโs Day decor because itโs one of my favorite holidays. Not because Iโm super sappy (which I am occasionally) but because Valentineโs Day is also my birthday. We call it Birth-Valentine’s Day.
Yes, my mom always says Iโm her favorite Valentineโs Day gift and yes, Isaac has to get me double the presents. Itโs great. The one thing thatโs not so great? Trying to make dinner reservations on my birthday. For this reason we usually stay in and cook dinner ourselves. If youโre planning to do the same, I have just the dessert for you.
It’s this chocolate covered strawberry chia seed mousse a.k.a the creamiest chia seed pudding I’ve ever eaten.
Ingredients Needed
- coconut milk โ I prefer using full-fat coconut milk because it increases the thickness, but feel free to use the milk of your choice.
- strawberries โ the real star of the show here!
- maple syrup, honey, or stevia โ totally optional, but these are my go-to natural sweeteners.
- chia seeds โ the real MVP of this recipe. ๐
- vanilla โ the perfect flavor enhancer.
- chocolate chips โ I love Lilyโs chocolate chips for a low-sugar option and Enjoy Life chocolate chips for a dairy-free/soy-free option.
- coconut oil โ melt the coconut oil with the chocolate chips and drizzle over the chia pudding to create a magic shell coating.

HI! Can’t wait to try this out! ๐ Can you make a batch and then seal them in mason jars for the week? or will they not work for days in the refrigerator?
Thank you
I don’t see that you received a reply, but I am curious if you ever tried to make it for the week and if so, how it turned out.
Would love to make it in advance of camping and have a ready-made treat. ๐
Hey Shelley – Chia pudding should last about 5 days in the fridge so you can definitely make some in advance for a camping trip. ๐
Thanks!
I just made this but I used dark chocolate almond milk instead. Gonna try it tomorrow. My first ever chia pudding ??
Ohh yay! Can’t wait to hear what you think! I hope you love it. ๐
If I wanted to sub almond milk for full fat coconut milk how many ounces would I use? Would it be the same?
Was thinking less since it’s not as thick but wasn’t sure. Thank you for the recipe! Planning to try today!
Hi Michelle! For 6 tablespoons of chia seeds, 2 cups of almond milk should work great! I hope you enjoy this recipe.
