This recipe was amazing! Followed everything exactly as written except swapped fire roasted tomatoes for just regular diced as I was trying to make it toddler friendly and it did not disappoint. I have a hard time finding recipes with a good amount of veggies for both my husband and daughter to enjoy – this took the cake. My husband said it was one of the best meals I’ve made!

Well this is something special! Very simple to put together, quick, and so full of flavor! The seasonings are bold but not overwhelming. This will become a staple in our household. I served over cauliflower rice. Yum!

This was delicious and easy. I used ground turkey instead of ground beef but otherwise followed the recipe as written. Served it with rice and black beans on the side. Thank you for this delicious recipe. My husband and I really enjoyed it.

Such an easy and quick recipe and adaptable to what you have on hand. It was a bit hit with both hubby and teen son. We served this with brown rice, so I got that going in the Instant Pot first and then started the prep for this. I didn’t have zucchini, so I used carrots instead and chopped everything up small. I used Penzey’s Chicken Taco Seasoning because it includes most of the separate spices in the recipe. My tomatoes were fire roasted crushed tomatoes. Once the rice was done, so was the meal. Delicious! I think it would be great with ground turkey too.
